Citadelle Gin is triple-distilled in the Cognac region of France by producer Pierre Ferrand using wheat and spring water. Before being steeped in neutral alcohol, the master distiller selects the 19 botanicals that will complement the freshness of the juniper with tart, floral and exotic flavours. A work of fine balance, it allows the flavours and aromas to intermingle in a perfect harmony. Once the steeping is complete, the infusion is then distilled in small Charentais pot stills with an open flame. The slow distillation allows the distiller to precisely select the heart of the gin, whilst the relatively low swan's neck favours the concentration of essential oils; all of which contributing to the gin's aromatic quality.
For the Old Tom gin Alexandre Gabriel uses a marvellous, moist and heavy brown sugar from the Caribbean, similar to Demerara. This sugar is toasted in copper cauldrons for a first stage of caramelization, then lightly thinned and finally alcoholised. The gin is then aged for three to four months in casks. To create his Old Tom, the expertise of the Master Blender consists of supplementing Citadelle Reserve selected for its floral aspect with aged sugar, then putting it all back into casks for several months, in order to obtain a perfect blend of all the elements, an ideal integration at 46% alcohol.
Old Tom Gin
Juniper berries, almond, orris root, fennel, aniseed, grains of paradise, orange peel, cardamom, violet root, lemon peel, coriander seeds, cubeb berries, cassia bark, liquorice root, savory, nutmeg, angelica root, cumin, cinnamon, yuzu, genepi & bleuet.
Nose: Fresh juniper, orange zest and cardamom, then it becomes more floral and vegetal, with jasmine and honeysuckle and notes of fennel and cumin, and almost sweet, with coffee.
Palate: Full and elegant, with a sweet and sour profile of preserved lemon zest, anise and almond, lengthening to spicy notes of nutmeg, cinnamon and cubeb pepper.
Finish: Floral, spicy and woody, with notes of coriander, violet, angelica, cumin, grains of paradise, and liquorice.
Martinez cocktail. Light tonic garnished with a slice of fresh ginger.
