Kaikyo Distilley’s Hatozaki is a new project set up by our favourite Sake brewery, Akashi-Tai, based in the coastal city of Akashi in Southern Honshu. The secret of Japanese whisky lies in the skill of the blenders, Hatozaki blends Japanese malt with imported whiskies and ages them in a combination of ex-sherry, bourbon and Mizunara oak casks.
Hatozaki Blended sees the marriage of both malt and grain whiskies, including whisky distilled in Japan and imported stocks. It's named after the nearby Hatozaki lighthouse, which is the oldest stone lighthouse in Japan.
Nose: Light, sweet malty aromas alongside more cereal notes and fragrant lemongrass. Fruity notes of nectarine and banana appear.
Palate: Grain sweetness, a touch of honey and barrel char, with more stone fruit and orange blossom.
Finish: An oily nuttiness appears on the finish alongside more cereal notes.
