In 2005 Paul Boutinot, after a long career establishing a wine distribution business in the UK, decided he wanted to retire and dedicate himself (and his family) to winemaking. He scoured the globe until he found the Waterkloof estate in Stellenbosch. He set about converting the vineyards to biodynamics, restoring vast swathes of the hillsides to natural flora and fauna, re-establishing a lost biodiversity to the site. He also invested heavily in developing a brand-new winery, designed around sustainability and recycling. All wines are fermented using natural yeasts in large, old (neutral) oak casks to demonstrate the true terroir of this unique vineyard.
