Maison Ambroise origins date back to the 18th century. At this time only a few parcels had been worked over several lifespans.
Bertrand Ambroise took over the vineyard from his father-in-law in 1987. He is gradually phasing in organic farming. Abandoning the use of chemical products in favour of natural products to stimulate the vines so that they themselves produce the necessary substances to fight pests and diseases in the vineyard.
All of the products used are organically certified. He removes many of the leaves around the bunches of the grapes to get riper tannins and has de-stemmed all the Pinot Noir since 2002 and macerates up to 28 days. In total he owns 21 hectares of vines mainly in Nuits Saint George.
Made from old vines with a minimum age of 45 years close to the Nuit St Georges slope so they have that classic NSG tannins and character. Matured in 400 litres barrels with 30% new oak for 14 months with no filtration.
Attractive, mainly black fruits nose. Plenty of intensity with a charming, soft round structure, Vibrant, fresh mid-palate.
