Cotswold’s distillery is the first full-scale distillery in the Cotswolds. They opened their doors in September 2014 and have welcomed visitors to the site every day since. Situated in an Area of Outstanding Natural Beauty, the desire to reflect the natural beauty of the Cotswolds and honour its heritage runs through everything the distillery do – they use local ingredients and traditional processes, and partner with other local producers.
Whilst the whisky is distilled from scratch, for environmental reasons to make the gin, the team begin with a base alcohol made from wheat. This ‘neutral grain spirit’ (supplied by Haymans in Essex) is at 96% ABV and is completely flavourless. It is the blank canvas that to which they add their recipe of botanicals.
The Cotswold’s team do not remove the essential oils from their gin as these create a rich flavour and mouthfeel. As a result, the gin forms a unique pearlescent cloud when ice or tonic is added, and it tastes delicious!

Tasting Notes
Nose: Light, floral juniper blends well with the Cotswolds lavender. This soon gives way to the vibrant grapefruit peel and warming cardamom.
Palate: Opening with grapefruit, fresh juniper and black pepper, followed by herbaceous notes of bay leaf, coriander and angelica. More lavender brings a bright, delicate character to the full-bodied gin.
Finish: Refreshingly clean on the palate, with lime and bay leaf.
Perfect Serve
Premium tonic garnished with a pink grapefruit wedge and a fresh bay leaf.
