The Cotswolds Distillery was founded in 2013 by Dan Szor in Stourton in the heart of the Cotswolds, inspired by his passion for single malt whisky. Making their home in an old barn conversion, Dan had his stills build by Forsyths in Rothes - the wash still is named Proud Mary and the spirit still is named Janis.
The first release from the Cotswolds Distillery was Cotswolds Dry Gin, which made its way to shelves in late 2014. Distilled with nine carefully considered botanicals - juniper, coriander seed, angelica root, local lavender, bay leaf, hand-peeled fresh lime and pink grapefruit zest, cardamom and black peppercorn - in their copper pot still, results in a rich and robust, award-winning gin.
However, whisky production is at the heart of everything they do at the distillery. They began laying down casks to mature in September 2014, and have filled a number of different types. These will be released in due course, allowing them to add a variety of different bottlings to their range as the years progress. They also produce a whisky cream liqueur which is made by mixing their new make single malt spirit with fresh Irish cream creating a wonderful rich liqueur.
Creamy, slightly floral and luxurious.
Like all good cream liqueurs, this is excellent over ice or in a coffee. Once opened, store in the fridge and use within six months.
