Created in 1974 on a historic terroir, the Domaine de l'Herre extends its 130 hectares of vineyards on the southern slope of a line of ridges offering an exceptional panorama of the Pyrenees. Located in the Gers in the heart of Gascony near Eauze, the Domaine de l'Herre produces white wines in the Cotes de Gascogne appellation from a wide variety of grape varieties: mostly Sauvignon, Chardonnay, Gros Manseng and Colombard.
At optimum maturity, the grapes are successively harvested at the coolest hours of the day, inerted with nitrogen, to protect them from the oxidation brought by the air, directly within the press where they will undergo a skin maceration to temperature controlled. This pellicular maceration is intended to migrate the aromatic precursors contained in the skins of grapes to the juices. Thanks to a slow and careful pressing, it is practically only the dripping juices that will be kept cold until they are fermented. The latter takes place very slowly (around 21 days) at a controlled temperature.
Juicy red apple and melon aromas with mineral and vegetal notes. Clean and simple style on the palate with a creamy mouthfeel.
This is a perfect light wine to be enjoyed by itself or with salads, seafood, fish but the producer also recommends spicy sausages and fresh cheese.
