A family estate established for four generations in Burgundy, the Domaine Jean Féry et Fils operates around fifteen hectares of vines, the plots of which stretch from the Côte-de-Nuits to the Côte-de-Beaune on about twenty appellations such as as Gevrey-Chambertin, Vougeot, Vosne-Romanée, Nuits-Saint-Georges, Hautes-Côtes de Beaune, Pernand-Vergelesses, Savigny-lès-Beaune, Meursault, Puligny-Montrachet, Chassagne-Montrachet, Corton grand cru. Today, the Domaine is embodied by Frédéric Féry and Laurence Danel has been its technical director since 2017.
The Meursault “Les Dressoles” is made from Chardonnay vines, around 55 years old, spread over a 0.69 hectare plot with a planting density of 10,000 vines per hectare.
Brown and reddish soil with little limestone. It is rich in silts and especially in clays, coming from the top of the hill. This soil remains draining, however, because it covers a subsoil rich in stones and boulders. This approximate stratum is due to an existing break above the plot.
Manual pruning is carried out with a simple guyot. The vines are treated in traditional cultivation with plowing and are in conversion to Organic Agriculture.
This wine is vinified in French oak barrels with around 60% new barrel with light heating. Aging continues for up to 14 months, before being massed for about 2 months, then lightly filtered and bottled. Vinification in oak barrels brings freshness and purity to the wine and allows the terroir to be expressed as well as possible.
This wine presents a limpid and brilliant colour, of pale gold colour with silvery reflections. The nose expresses notes of white fruits, pear, ripe citrus, then toasted and brioche notes. The palate is invigorating, chiselled, the aromas of ripe lemon, Williams pear are revealed, the creamy and rich finish concludes the tasting of this Meursault in style, which will remain fresh for many years. Whatever its age, this wine is distinguished by its magnificent balance: both fat and energetic, smooth and structured, it is long in the mouth and of exceptional aromatic intensity.
It goes harmoniously with fish in sauce and shellfish. The ideal serving temperature to enjoy this wine is between 12 and 13 ° C.
