The Eden Mill story started with a mission to revive the lost art of distilling and brewing in St Andrews. As Scotland's first single-site distillery and brewery, making gin, whisky and beer, Eden Mill spirit is created in copper pot-stills and exhibits a wide range of flavours from botanicals sourced from the local area, as well as from around the world.
As creators of craft gin, whisky and beers, their team of distillers have the opportunity to marry the best practices from all these disciplines. The team is challenged with applying modern techniques and understanding to time honoured traditional methods. An appreciation of the intricacies of barrel aging and quality wood is one benefit they enjoy from this special status. Applying this in order to develop truly innovative creations, such as the bourbon-aged Oak Gin.
To create their award winning Hop Gin, they married their brewing and distilling skills. Hops, a core ingredient of beer, meet the distillery’s gin and the result is a zesty citrus and apricot aroma. Strong, at 46%, with a thick, heavy, rich finish as a G&T.
Because of a balance between floral, coriander and light hoppy notes, a soft tropical fruit follows with an undercurrent of juniper.
This leaves smooth, hoppy and fresh apricot notes balanced with a refreshing crisp bitterness. In essence, Hop gin leaves a ‘well rounded’ mouth feel that gently fades with a light hoppy character.
Juniper berries, angelica root, coriander seeds, Australian Galaxy hops amongst other botanicals.
Try simply on the rocks with a wedge of lemon. Works well as a wet martini with a twist of pink grapefruit.
