Altamira is renowned for Mendoza’s most distinctive soil profile—a mosaic of sandy, silty, and stony soils interwoven within the same vineyard. The stony parcels are particularly striking, their round rocks coated in a white layer of calcium carbonate. These soils are notably low in organic matter yet rich in minerals, a combination that naturally limits yields and fosters exceptional concentration of aroma and flavour.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eGentle de stemming, cold maceration for 2 days and whole berry fermentation with natural yeasts at a maximum temperature of 22° C.
