Maison Ambroise origins date back to the 18th century. At this time only a few parcels had been worked over several lifespans.
Bertrand Ambroise took over the vineyard from his father-in-law in 1987. He is gradually phasing in organic farming. Abandoning the use of chemical products in favour of natural products to stimulate the vines so that they themselves produce the necessary substances to fight pests and diseases in the vineyard.
All of the products used are organically certified. He removes many of the leaves around the bunches of the grapes to get riper tannins and has de-stemmed all the Pinot Noir since 2002 and macerates up to 28 days. In total he owns 21 hectares of vines mainly in Nuits Saint George.
Medium garnet. Intense beautiful Burgundian perfumed Pinot Noir. Mainly primary fruit, but with a savoury edge, bacon perhaps. Sous Bois. Some spicy oak, but not obtrusive. Medium acidity and astringency. Sweet, light, delicate fruit. Extremely long, with tangy perfumed finish.
