Château des Ferrages is located in Pourcieux, halfway between Aix-en-Provence and Saint-Maximin, in the prime plots of the Sainte-Victoire appellation. The coolness of the weather is one of its blessings. Whilst rosé wine was already being made at this 8ha Domaine, hillside plots were quickly identified to produce red wine, and others for white.
The range includes two Sélection Parcellaire (single vineyard selection) wines that are produced under biodynamic farming principles.
Clay-limestone soils with varying amounts of sand. Shallow, well-draining soil. Parcels located in the villages of Pourcieux and Pourrières at the feet of Mount Aurélien and Mount Sainte-Victoire. Mediterranean climate.
Harvest is carried out by machine at night to preserve freshness and aromas. This rosé is the result of direct pressing and stabulation on the fine lees. Fermentation is temperature controlled. Alcoholic fermentation takes place at a low temperature (16-17 ° C). Aging is carried out in stainless steel vats.
The nose reveals red fruit with notes of white flowers, strawberry, peach, grapefruit and hawthorn. On the nose, fresh, smooth and ethereal structure, with a deliciously fruity strawberry flavour on the finish.
Excellent served with crayfish/lobster risotto.
