Domaine J.Laurens is located in the south of France, on the small village called 'La Digne d'Aval', less than 5 kilometres from Limoux, a stone's throw away from the famous old city of Carcassonne, one hour from Toulouse and two hours from Montpellier. Since the 80's, the domain focus only on sparkling wines in 'AOC'' of Blanquette and Cremant de Limoux.
Mauzac is the traditional grape variety of Limoux which has a characteristic appley flavour. It achieves naturally high acidity which is an absolute must for high quality sparkling wine. With two strong winds, the Limoux region is extremely windy: the vent cers from the Atlantic and the warm vent marin from the Mediterranean. The soil in the area is rocky with clay, sandstone and limestone, creating distinct terroir throughout the region and clay composition in the soil.
Produced using the méthode traditionnelle; pneumatic pressing, an initial fermentation in stainless steel vats, then second fermentation in bottle. Production limited to 40-50,000 bottles.
This bone-dry blanquette has a tight and finely textured mousse. It shows great typicity with apple blossoms and honey on the nose with a bright, crisp and delicately nutty palate.
