Edi Keber Collio DOC

Edi Keber winery is one of the most representative wineries of the entire territory of Collio Goriziano. In the amphitheater of Zegla, Edi's vineyards are immediately noticeable: you do not need experts eyes to see the love and dedication that push Edi Keber to care for, and to protect his vines in the best possible way.

Edi has long since given up any chemical treatment to focus on organic viticulture. All these "special" treatments are the result of a true and genuine love for his land, the love that has also pushed to involve fellow winemakers, restaurateurs and gourmet food producers in the Small Collio, created to promote local products and tourism in the area.

The prudent practices in the vineyard are followed by a careful process in the cellars: here, concrete tanks still take a dominant role compared to steel tanks, which are used only to clear grape wine, and the old tonneau casks, only useful to define the character of the wines.

It is the extreme techniques used in vineyards and winery that have made Edi take the bold decision to produce only one wine, Collio Bianco, which proves the perfect synthesis of the Collio area: a wine that is from year to year a masterpiece of harmony and elegance, pleasure and depth of flavour. A really unique wine.

The entire 14ha of vines across Brda, Slovenia and Collio, Italy, are managed strictly Biodynamically, though Kristian is not bothered about signing up for official Demeter certification. Grasses in-between rows have never been mown during the Kebers ownership, preferring to maintain a grass permaculture to promote soil fertility and insect biodiversity, as well as aeration of the soil from the deeper roots of established grasses. 2 cows and 4 sheep are rotated 1ha at a time to manage the grasses and provide manure, with the animals taking shelter in the cooler forest close by in the warm summertime.
Kristians new cellar is being build in Brda which will work entirely through gravity, also without requiring mains electricity or even water.

Malvazija Istriana, Ribolla Gialla, Tocai Friulano

Kristian (son of Edi) farms 12 hectares on the western side of the hill (Collio) along with 2 hectares just over the border in Brda, Slovenia.

Grapes are predominantly Tocai Friulano with Malvasia and Ribolla Gialla. We're talking more skin contact here than in the entire Emmanuelle trilogy. The total production is 60,000 bottles.

Dry on the palate with nice minerality and hints of grass and intense, long finish. Skin contact gives this an attractive pithy bitterness. Subtle tannins add superb length and complexity.

Try with prosciutto di San Daniele or mussels in a garlic butter.
