Kaikyo Distilley's Hatozaki is a new project set up by our favourite Sake brewery, Akashi-Tai, based in the coastal city of Akashi in Southern Honshu. The secret of Japanese whisky lies in the skill of the blenders, Hatozaki blends Japanese malt with imported whiskies and ages them in a combination of ex-sherry, bourbon and Mizunara oak casks

Hatozaki Small Batch 12-Year-Old Umeshu Cask Finish is a 100% hand-crafted malt whisky, a blend of premium single malts, each aged for a minimum of 12 years in American Oak casks before being married and then further finished in bespoke barrels that previously held superior Umeshu liqueur for an additional 6 months.

Tasting Notes

Nose: Floral honey, creamy vanilla, and lots of fresh orchard fruit.

Palate: Through cherry blossom and lavender comes lychee, dried apricot, sweet peaches in cream, and toffee.

Finish: Violets and vanilla linger.
