Chapoutier, or Maison M. Chapoutier, is a winery and negociant business situated in Tain-l'Hermitage in the Rhone region in France. Chapoutier produces wine from appellations across the Rhone region, but it is typically their top Hermitage wines, both red and white, that receive the most attention and accolades.
The Roussillon area was made for Michel Chapoutier and it was in Latour de France that he set up Domaine de Bila-Haut, on a combination of soils perfectly suited to spicy Syrah, fruity Grenache and tannic Carignan – key Languedoc-Roussillon varieties – basked in the southern French sun and freshened up by the coastal ‘tramontane’ wind. Black and brown schist give the wine the sunny ripeness, gneiss minerality and freshness and limestone and chalk strength and balance.
A number of Selection Parcellaire (single vineyard selection) wines are also made at this unique domaine.
Vineyards
The plots are located on the slopes of the high Agly Valley. They are composed of gneiss and schist from the Devonian Period with calcareous clay.
Vinification
50% Syrah 40% Grenache 10% Carignan
Hand-harvest and entirely destemmed. The maceration lasts from 2 to 4 weeks according to daily tastings.
Tasting Notes
Aromas of black cherry, on the palate this wine is fleshy and well-structured with the warm soils of the Roussillon area.
Perfect with beef dishes and Mediterranean cuisine.
