Heaven Hill was founded shortly after the repeal of Prohibition in 1935. Heaven Hill's location in the historical home of bourbon-making, coupled with its status as the only such company still under local ownership, has led it to take a role in curating and advertising bourbon tradition. In 2004, the Bourbon Heritage Centre was opened on distillery grounds, featuring historical exhibits and guided tours of the plant. The company also hosts the annual Kentucky Bourbon Festival, and many of the company's own labels are named after famous local distillers.
Mellow Corn Bottled in Bond
Mellow Corn is produced in accordance with a unique set of regulations that define Straight Corn Whiskey. It is distilled from a mash of at least 80 percent corn and aged for four years in a once-used Bourbon barrel. Compared to the deep amber colour created by the newly charred oak barrels in the production of our other Bourbons and American Whiskeys, the result of the used barrel is a lighter, straw-coloured spirit. Heaven Hill Distillery is one of the few remaining producers of this unique whiskey.
Tasting Notes
Nose: Soft vanilla, apple & popcorn. Think Calvados meets Bourbon.
Palate: Full-bodied and textured, with a soft corn and toffee apple.
Finish: Sweet and chewy like a Barbadian Rum.
