The Boatyard Distillery is an award winning farm-to-bottle distillery located on the banks of Lough Erne in north west Ireland. Only the best organic ingredients are chosen by the distillery with the terroir of the land at the forefront of each new spirit.
Founder, Joe McGirr, has utilised his background in spirits and whisky knowledge to build his dream of the first legal distillery in Fermanagh in over 130 years. Joe’s dream to build a distillery in the place in which he grew up was inspired by his family’s rich farming history - from grandad Brian who was a ploughing contractor to father Michael who was a dairy and beef farmer. “It’s great to now be able to give something back to the land; all of our spent grain from our spirits go back to the land and the cows and we claim the happiest cows in Ireland!”
Boatyard Old Tom is made using the Boatyard Double gin, distilled with 8 different botanicals including Sweet Gale harvested on the family farm. It is produced in ‘Doc Brown’ the 250-litre still. The collected spirit rests for a minimum of 4 months drawing flavour and colour from the cask. After the short resting period, Boatyard add Fermanagh honey for natural sweetness, imitating 8th Century Old Tom Gins.
Barrel Aged Old Tom
Juniper, sweet gale, fresh lemon peel, coriander seeds, liquorice root, angelica root, orris root & grains of paradise.
Vanilla and spearmint, fennel, orange gummy sweeties, peppery hints bolstered by the cask influence.
Tom Collins/Martinez. Light tonic garnished with dehydrated orange.
