Product Information

Business partners Mat and Rachael Thomson began their whisky journey in 2009 as independent bottlers, releasing whisky from the closed Willowbank distillery. Shortly after, they started to experiment with smoking barley and home distilling before opening their eagerly-awaited distillery in 2014.

Their creativity and passion for flavour has remained at the centre of Thomson Whisky’s process and has played a crucial role in defining what New Zealand whisky is. They incorporate local ingredients such as manuka wood to smoke the whisky, which imparts a sweet barbecue smoke, as well as a more familiar peat smoke cut from the South Islands.

Production

Thomson distilleries water is sourced locally, from rainwater. Clouds formed over the Tasman Sea rain down on the forested Waitakere ranges.

The barley is grown in the Canterbury plains of the South Island is some of the best in the world. The nutrients captured in the barley express the terroir of the unique New Zealand soil and climate.

In the case of this whisky, the dried malt is re-soaked on site and smoked with Manuka wood which seeps into the wet grains.

Distillation takes place in a 1,900-litre copper wash still and a 1,000-litre copper pot spirit still. Thomson distillery cooper their own barrels onsite, a range of ex-bourbon barrels and ex-New Zealand wine casks form the bulk of their aging stocks.
