As indicated by the meaning of the word CUVÉE, this wine comes from the mixture of different wines and different vintages, widely used in the French Champagne region. In this case, Tobia have selected two vintages, a majority, that would be the recent 2019, of high quality for its low yield in the vineyard and mixed in a percentage ranging from 25-35% with another vintage that would be the 2018.
The vineyards selected for this new wine TOBIA CUVÉE, are vineyards of high quality, where maximum yields of grapes do not reach 5,000 kg / ha. They are exceptional farms, with ages between 20 and 60 years spread by different municipalities such as Tudelilla, Arnedo, Ocón (Rioja Oriental), Laserna (Rioja Alavesa) and Hormilla (Rioja Alta). These vineyards are planted at high altitudes, ranging between 520 M and 600 m. above sea level, which will bring a great natural freshness to the wines.
The varieties that make up these wines of the vintage 2019 and 2018 would be Tempranillo, which would be the majority and Garnacha that would be the minority, but in a considerable percentage.
A part of the wines follows a traditional grape destemming process where it is coated with a cold film maceration (12ºC) for 48 hours. This vinification is carried out in our” intelligent deposits” of the different vineyards separately with a gentle destemming and without squeezing the grapes, for 7-9 days at a maximum controlled temperature of 24-25ºC, to favour the extraction of fruit aromas. Another important part of the wine is made with grapes without destemming, that is, with whole bunches, and from this winemaking is where we take advantage of the heart fraction of the whole grape and a percentage of the press fraction.
One of the wines used in our CUVÉE also completes its vinification with aging in barrels of 1 and 2 uses of American oak for a short period of 4-6 months.
The appearance is very clean. bright, has a cherry red colour with purple edging and medium layer. On the nose the wine has a very clean and fragrant aroma. The fruity notes dominate, where we can find endless aromas of blackberries, currants, strawberries, raspberries. Floral notes appear like violets, on a very fragrant background of toffee caramel, red fruit jam and liquorice. The wine is initially sweet and friendly on the palate. It has a great freshness, unctuousness, volume, roundness and very ripe tannins. It is a full-bodied and very balanced wine, with a long and persistent finish. Refreshing and tasty. Intense retro nasal with memories of fruits of the forest.
