Producer Information

Since the 17th Century and for no fewer than 10 generations, the Bader-Mimeur family has owned vineyards in and around Chassagne. In 1919, Charles Mimeur, a Maranges winegrower, acquired 98% of the Château de Chassagne Montrachet vineyards along with other plots in Chassagne and Saint-Aubin. The following year, his daughter Elise Mimeur, married Charles Bader who went on to develop the business in Paris. The Bader-Mimeur name was born. Passed down from generation to generation the eight-hectare vineyard is now run by Marie-Pierre and her husband Alain Fossier, they are assisted by the next generation, Nathalie and Sebastien. In addition to their Château de Chassagne-Montrachet vineyard, Domaine Bader-Mimeur also owns and runs three hectares in Chassagne-Montrachet and Saint-Aubin.

Production

The vines of the Chassagne Montrachet vineyard have been tended by Bader-Mimeur since 1919. They are all located in the Chassagne Montrachet AOP area.

The winery and the location of the buidings of the Château, within the give the assurance to follow the regular evolution of the vines.

This geographical situation allows a minimum time between harvesting the grapes and the start of the vinification, with the crop arriving at the presshouse in optimal conditions.

On arrival at the winery, white grapes are carefully dumped on an elevator which drives them in a leading-edge pneumatic press. After a small twelve-hour decantation into vats, the juice is put by gravity into the oak casks of the cellar, under the winery.

The wine of different vineyard sectors is individually treated in different casks. Casks are made from the best oaks and partially renewed (about 20% each year). So that there is the very best marriage quality between the oak and the vintage.
The alcoholic and malolactic fermentations follow each other naturally. The casks are topped-up to compensate every week for the evaporation. This process is called “l’ouillage”.

The wine is regularly tasted, analysed, surveyed and gently aerated (by slow transfer from one cask to another) to obtain the maximum expression of quality on your table. The resulting wines from different “cuvées” of the same appellation are blended to obtain the quality and taste that satisfy our customers. The wine will mature in oak casks during 10 to 14 months before bottling.

Tasting Notes

A subtle scent of Mirabelle has a hint of chalk and creaminess on the nose of this wine. The concentrated palate comes with freshness that counters the warmth and insistence of that concentration. This is rounded and powerful, yet precise
