Our first widely loved little underground venue in Leeds city centre - Poison Cocktail Lounge sprung up in the early summer of 2017. This gorgeous little cellar bar beneath the busy nightlife of Leeds was the stomping ground for some rustic, outside the box mixology that was served up in a super relaxed atmosphere where laughter and the clink of glassware always permeated.

We hand made our own ice blocks, foraged for ingredients and poured a wealth of imagination into a seasonally shifting menu capturing the twist and turn of flavours through the year.

THE YEAR THE WORLD STOOD STILL…
2020 turned the world on it’s heels and we ultimately lost the venue. After a brief period of “what now?!” we firmly dug into an exciting new venture - Distillation. This progression only felt right, after all, spirits has always been our passion!

We were well versed with the theory of distillation and the history of spirits, but needed to emerce ourselves in this new art; transferring that creativity we were known for down at Poison, and transferring it into a new field using this ancient technology.

Our first concept was Underwood Dry Gin (what is now Whitewood’s flagship gin). After working hard to sculpt a unique concept of spirit (leaving the shite one’s behind!) we were kicked off by Wharf Distillery down in Northhamptonshire for our first two small batches, while we started to build on the budding framework of Whitewood.

In the beginning of 2021 we were granted everything we needed and for us to move forwards, we needed to realign and reshape our structure. Thus Whitewood was born from Underwood’s early work and our lovely little Alembic still was fired up for the first time for us to produce the subsequent batches of our dry gin, and begin experimentation for some amazing new products.

We capture this philosophy in our logo symbolised by the twin branches growing up and out, and the dot symbolising the past, or the seed from which progression is born.

The rune that stands as our logo was a twist on Fehu - a fire rune that is said to be a symbol of creativity and progression.

Flambe Pineapple Botanical Spirit

Bursting with a rich layers of caramelised pineapple that we flambé in quality Jamaican overproof rum.

We then infuse that pineapple into a distillate made up of light and herbal Lemon Verbena, bursting zesty freshness from Lime Zest and the unmistakable sweet spice notes from Tonka Bean and left to infuse for around 7 days.

The result? An explosion of interplaying fruit, spice and zesty goodness.

Enjoy neat, over ice or enjoy with a premium mixer (we suggest light tonic, or ginger beer).

A little dribble in a glass of champagne goes a long way too!
